Living The Good Life

I may not have much in possessions, but people, I am rich in other ways.

I have much to be grateful for.  I have a Christain family. My boys are sometimes

arrogant but all in all , they are good. They have big hearts  and would do anything

 for anyone , within reason.  

Worldly possessions, I may not have, But, I DO HAVE MY GOD, and he is very good to me

and my family.

He has kept us warm and dry and with food on the table.

This is sweet.  He needs a world of patience with me sometime,

 I am sometimes guilty of sliding down the hill instead of climbing

 it. But, I do get straightened out in a short order. He brings me

around to his way of thinking real quick.  I would be lost without him.

Scripture Fruitcake

All these ingredients are found in the Bible

1 c butter–Judges5:25                    1 c almonds– Numbers 17:8

3 1/2 c flour — Kings4:22               6 eggs–Isaiah 10:14

3 c sugar –Jeremiah 6:20                1 T honey –Genesis 43: 11

2 c raisins — 1 Samuel 30:12           1 pinch salt– Leviticus 2:13

1 c water –Genesis 24:17                 spices to taste –1Kings 10:10

300 degree oven

Follow King Solomn’s advise for making a good boy and you will have a good cake.

(Proverbs 23:14) Add 1c nuts. (Genesis 43:11) Add 1 c dates. (Chronicles 31:15)

You will have a cake fit for a marriage feast. Bake in a slow oven. (Leviticus 2:4)

The cake needs No frosting. If you desire frosting., Caramel will add to the flavor.

Bake til the cake pulls away from the sides.

Fresh Apple Cake

2 c diced apples                                   1 c flour

1 egg                                                     1 1/2 tsp.  cinnamon

1c sugar                                                1 tsp. soda

1/2 c chopped nuts

350 degree oven\

Mix sugar and apples until sugar melts. Add egg and beat well.

Sift dry ingredients and stir into apple mixture. Add pecans.  Bake 25

minutes in 13×9″ pan.

 

Sauce for Fresh Apple Cake:

1/2 c dark brown sugar                          1 tsp. vanilla

1/2 c granulated sugar                           1 c water

1/4 c butter                                            2T flour

 

Mix all ingredients and cook over low heat to thick.

 Pour over the cake when it comes out of the oven.

Chill and serve with Whipped Cream.

 

*** This is also good for a dry pie

10 Minute Cake

2 c flour                                          1 c water

2 c sugar                                         1/2 c buttermilk

1/2 c oil         1 tsp soda                                 2 eggs

4 T cocoa                                        1 tsp vanilla

400 degree oven. Mix together, flour and sugar. Bring the following to a rolling boil: oil,cocoa, and water and pour over the flour and sugar mixture..Mix well and add buttermilk, eggs, and vanilla. Mix well and pour into greased 11x 17 x1″ pan or jellyroll pan. Bake 10 minutes.

 

Frosting:1 stick butter                      1 box powdered sugar

4T cocoa                                              1 c chopped nuts

6T sweet milk                                      1/4 tsp. vanilla

Mix well and bring to a rapid boil: cocoa, butter and milk. Pur cooked mixture over powdered sugar.

Add nuts and vanilla and mix very well.

Coconut Cake

2-   6oz pkgs coconut                               2c sugar

2 c  sour cream                                          1 box white cake mix, baked in 2 layers

 

Mix together coconut, sour cream and sugar. Let this set overnight. Bake cake as directed on the box.

Split layers into 4 pieces; w pieces per layer. Put filling betwee and  on  top. Wrap and store in refrigerator for 3 das. Sav 1 c. filling; mix this reserve with cool whip to iced cake.

White Chocolate Cake

1/4 lb. white chocolate                  1 tsp. baking powder

1 1/2 c boiling water                      1 c buttermilk

2 c sugar                                         1 c coconut flakes

1 cup butter (2 sticks)                      1 c finely chopped pecans

2 1/2 c cake flour                            1 tsp. vanilla

Preheat oven to 350 degrees

Melt chocolate in boiling water and let cool to room temperature.

Cream butter and sugar. Beat in eggs, 1 @ a time, until well blended.

Add chocolate and vanilla. Sift flour with baking powder and add to

mixture alternately with the buttermilk in 4-5 additions. Beat

just until smooth,after each addition. Do Not Overbeat! Stir in coconut and

chopped nuts.  Turn batter into 3 greased layer cake pans and bake

20-25 minutes.

FROSTING;

Cream Cheese Frosting

1 box confectioners’ sugar        1 stick margarine

1  – 8 oz pkg cream cheese       1 c pecans,chopped

1 tsp. vanilla                              1 c coconut

Mix cream cheese and butter. Add powdered sugar

and vanilla. Stir in pecans and coconut.
