White Chocolate Cake

1/4 lb. white chocolate                  1 tsp. baking powder

1 1/2 c boiling water                      1 c buttermilk

2 c sugar                                         1 c coconut flakes

1 cup butter (2 sticks)                      1 c finely chopped pecans

2 1/2 c cake flour                            1 tsp. vanilla

Preheat oven to 350 degrees

Melt chocolate in boiling water and let cool to room temperature.

Cream butter and sugar. Beat in eggs, 1 @ a time, until well blended.

Add chocolate and vanilla. Sift flour with baking powder and add to

mixture alternately with the buttermilk in 4-5 additions. Beat

just until smooth,after each addition. Do Not Overbeat! Stir in coconut and

chopped nuts.  Turn batter into 3 greased layer cake pans and bake

20-25 minutes.

FROSTING;

Cream Cheese Frosting

1 box confectioners’ sugar        1 stick margarine

1  – 8 oz pkg cream cheese       1 c pecans,chopped

1 tsp. vanilla                              1 c coconut

Mix cream cheese and butter. Add powdered sugar

and vanilla. Stir in pecans and coconut.

Pizza For Camping

2 slices white bread

2 tbsp pizza sauce

2 slices onion

pepperoni

ham

mozarella cheese

parmasean cheese

On each slice of bread in order in whic they were intoduced ;

\then grill till cheese is melted.  YUM!!

Almond Balls – Italiano

1 c sifted flour

1/2 c butter

3/4 c chopped almonds and chopped moist coconut

1 egg – separated

1/4 tsp. vanilla

1/2 c apricot preserves save to last.

Preheat oven to 300 degrees.  Cream butter and add sugar gradually and continue

creaming to fluffy. Add egg yolk and extract and mix well.  Add dry ingredients very slowly and mix .

Roll into balls.Dip the balls i beaten egg whites.  Roll in chopped nuts and coconut.

Place on parchment paper covered pan and gently press the center with thumb. Bake about 15 minutes

When cookies are done–and still warm add preserves

Gardening

I love to garden, I guess ya could say it is my therapy.  Wathcin those vegies peek

out of that ground thrills me.

Guess I am a true Country Gal.  Then, when the plants start to bare fruit,

I am so thrilled to see all those little green beans , cucmbers and corn,

tomatoes and other vegies. It is amazing.

I can my own vegetables and juices, jams and jellies Then when I cook and bake,

I use these fresh items.

How much better things taste. Soups and chilis are much better

than you can get anywhere.

The desserts are loved by all.

I learned to bake  and cook by watchin Mom and Mamaw.

But , my Mom taught me how to can. And I do love to do so.

It not only tastes good but it saves money besides.

Now , the jars I use for cannin, are used over and over again.

I just buy different lids and rings. {not expensive}

Besides baking my cakes and things,  I can Salsas, tomato sauce, spaghetti

sauces and pickles and relishes.

I have loads of fun but get terribly tired.

Ya know in the winter time , there is nothin like a hot bowl of soup

and a slice of chocolate cake.  YUMMY!!

Mixed Fruit Pudding

Beat 1 egg well And add:  1 pint fruit

Later – after sifting – add: 1 1/2 c flour          1tsp. b powder

1 1/2 c sugar                                                   1 tsp. soda

1 pinch of salt

Pour into prepared loaf pan and add 1/2 c brown sugar and nuts.

Bake at 350 degrees until toothpick comes out clean.

ICE CREAM PIE

2/3 c sugar                       3 slightly beaten egg yolks

3 T cornstarch                   1 T butter

1/2 tsp salt                        1-1 1/2 tsp vanilla

3 c milk

In a saucepan, combine sugar and cornstarch. Gradually stir in milkand cook over medium heat, stirring constantly. Boil 1 minute. Will become thick. Remove from heat.Gradually stir in 1/2 hot mixture into eggs yolks,  add rest of hot mix and boil 1 more minute. Remove from heat.Add vanilla and butter. Cool. . Pour into graham cracker crust and freeze.

I Remember

As everyone knows, I love to bake; but not only do I bake I cook.

I remember, coming home from school one day, Mom was at work.
Oh boy, my BIG CHANCE. It was cold outside and thinking it would

be a treat for Mom, I would make Chili. I found out later, Mom didn’t like chili.

Dad did though. Mom’s preference was vegetable soup.   Back to the chili.

Oh boy, it was the talk of the house for a while.  It was good, just hot and not

just heat hot, it was spicy hot. Ya see, I put 2 entire jalapeno peppers in it.

It was all I could do to eat it.

Dad laughed about it, Mom all but cried.She ate it but…..  I knew I made a flop.

But, the next chili was Super. Dad ate and ate.

Then, I tackled the vegetable soup for Mom.

She said it was the best I ever made.

I have been making vegetable soup ever since. Have to say __I am good at it.

Even had a deputy to want my soup.

I got to the point where I would make soup and take it to the shut ins.

Boy, did they enjoy that.

I would, at Christmas, make up a basket of soup , crackers, and cookies.

I knew they would have turkey or ham so, I thought they would enjoy a change

of pace and the soup was it.

Now, it got to be a routine. Every year at Christmas soup , crackers, and cookies.

I thoroughly enjoyed that.

How To Make A Cake

Preheat the oven, get the ingredients and utensils you will need.

Remove toys and blocks from the table.

Prepare the pans and get nuts to crack.

Get ready 2 c flour. Take your son’s hand out of the flour.
Wash him up

Re-measure the flour.

Put flour, salt and baking powder in sifter.

Get the dustpan and brush up the broken bowl. {son broke it]

Find another bowl.

Someone knocks on the door.

Go back to kitchen, Son’s hands are back in flour.

Clean son up.

Put more wood in the stove.

Return.

Remove 1/4 ” salt from the greased pan.

Look for son;  Grease another pan.

Change Baby’s diaper.

Return to kitchen and go to find son.

Remove his hands from the bowl;

Take up greased pan

Find another layer of nutshells in it.

Go after son, there went the bowl on the floor

Wash down kitchen, floor, walls and dishes.

Lie Down

Here come Hubby

Then You hear, “What have you done today?”

Happy Cake

2 c love                    1 pound of joy

1 c friendship           1 box of faith

1 pound long suffering

4 Tbsp gentleness     1 box of meekness

1 c kindness              1 pound peace

Combine all ingredients ; bake in oven for forgiveness

for 2 hours of prayer.  Cool on the table of understanding.

Corn Fritters’

1 can whole kernel corn                        1 1/2 c pancake mix

2T. chopped green pepper                     2 beaten egg yolks

2 stiffly beated egg whites                    1T chopped pimento

  1. Drain corn and safe the liquid.
  2. Add enough milk to liquid to make 3/4 cups.
  3. Set aside,
  4. Combine mix , corn, green peppers, and pimento  in med-size bowl.
  5. Add rest of liquid and egg yolks and blend well.
  6. Fold in egg whites.
  7. Drop by tspful into hot oil.[375 degrees]
  8. turn when brown on underside
  9. Fry to golden. 3 minutes.
  10. Drain and serve with Maple syrup
  11. Also good with and type of dried beans.
